I think all types of balsamic vinegar are great, they all have their own unique flavor and place.

I personally prefer white balsamic for cooking because of its milder flavor and lack of color. But I can't use anything else other than red or black aged balsamic vinegar for salads and vegetables.

So if I'm cooking with ingredients that are already very flavorful, I go with white balsamic vinegar. If I'm cooking with ingredients that lack flavor, I use red or black balsamic vinegar.

@burcidi-- I agree, I like the fruitiness of white balsamic vinegar. It's also more gentle on the stomach. Regular balsamic vinegar is too strong, and it overpowers all other flavors. I think it's the best balsamic vinegar.

I had been using red balsamic vinegar for some time now. But the other day, I saw the white balsamic vinegar next to my red one and decided to give it a try. I'm pleasantly surprised! It truly is milder than red balsamic vinegar, I think it's much better for salads.

I made a yummy salad dressing with it last night. I just used white balsamic vinegar, some lemon juice, olive oil, salt, garlic and oregano. It was delicious!

I would like to try other white balsamic vinegar recipes. I think it would be great with pasta. Does anyone have a recipe for pasta sauce with white balsamic vinegar.
